When it's been an indulgent kinda-week I like cooking a simple & light 'Green Giant' soup that has the most delicious, but unusual combo:
Fennel & Pear
Fennel contains melatonin which can stimulate fat cells to burn, not store calories + contains phytoestrogens which have antispasmodic properties which can help with pain cramps (for all my ladies out there)!
Adding the pear helps to sweeten the soup and give it a delicious flavour.
Both pear & fennel are also packed with potassium which helps fluid retention in the body. You won't believe how rich and creamy this tastes!
Quick & Simple Recipe for Fennel & Pear Soup
1 white onion + 1 bulb of garlic
When the onion is starting to dry out add 1 chopped fennel bulb (chop off the fennel funnels, then chop the main fennel round into halves top to bottom, then chop of the bottom round bit on each side, finally chop like you would an onion) and 600ml of vegetable stock to the pan.
Bring this to the boil.
Add 2 chopped pears & simmer on a lower heat for 20-30 mins or until the fennel is tender.
Carefully blend the soup to the consistency you like with a handheld blender, serve with a tad bit of olive oil on top and any fennel frothy bits you have kept to one side - just for the fun of it!
